Hey all! Kristina checking in. Not sure I have mentioned, but I work days, my husband works nights and we have 2 children. This translates to a hectic schedule sometimes. To help manage time, we cook freezer meals in our household. I cook at least three recipes a week but in batches of 4 weeks worth of meals at a time. I prefer to do no cooking on the day of assembly but that doesn't always work out. This particular "recipe" is just a big pot o' chili. 
We keep an eye out for meat on sale and then stock up. For this recipe, we have 4 lbs of ground beef (1 lb per week) and 2 onions (half an onion a week) and put it all in the big pot. We browned the meat and cooked the onions at the same time. 
Fun part is draining off the grease. You don't want it down the sink! So I put a big, deep, plate, under the strainer and strain off the grease. Then I use a funnel and funnel the grease into an old spaghetti sauce jar or whatever I happen to have on hand for disposal later. 
I used 4 cans of kidney beans and 4 cans of diced tomatoes. Drain and rinse off the beans! Otherwise they are gross and slimy. You can change out the kidney beans for any you prefer, black beans make a good alternative. Add as much water as your family prefers. We don't like it too thick but we don't want chili soup either. After that just spice as desired. I usually add lots of chili powder, salt and pepper and we are good to go.
Let it cool all the way then bag it up into individual gallon bags. I really just divided evenly, I didn't measure or anything. Write on the bag what it is before you put anything in it. Defrost in the fridge the night before and reheat the day of. Serve with cornbread, sour cream and cheese, or your preference of side. Quick, fast and easy!

Freezer meals work great for hectic schedules and helps keep you from eating out. Chili is a great one! Yummy on a chilly day. I just made steak chili for our family Halloween party. It was delish! Thanks for sharing with SYC.
