 I took a class on canning from Colorado State University - home study course - and yes, I did graduate and yes, I learned a lot! I finished the class feeling more confident in my canning abilities. Since then I have canned - water bath and pressure - a lot of jellies, fruits, veggies, meats and soups. I am always on the look out for good recipes.

This website, Canning Nirvana, (very apt title) is an awesome site about canning and has a very comprehensive list of recipes.  I stumbled on the site from their post Can Me Up: Over 50 Canning Recipes (click the pic to open). 

If your read the comments, you will find links to even more recipes! I have bookmarked and plan to return often!

One of the first recipes I tried from the Ball canning book for Strawberry Jam made like two dozen jars - too many really for just us. Then I found this book when spending Christmas cash; Small Batch preserving - sounded perfect! 3 or 4 jars of something - if it ended up something we didn't like it was easy to get rid of a few jars and if we did like it we could make a few more batches!  

The book has easy to follow instructions, a variety of recipes and mouth watering pictures, this book is worth it's weight in....full jars! I have tried several of their recipes and each one has been delicious! I give this book 500 stars!

Here is a jar of the Apple Pie Jam recipe from the Small batch book. This jam is DELICIOUS!! Apples, sugar and cinnamon, cooked together until it reaches that state that it turns into jam, spread on some toast..... yes, I am drooling! I ended up making this recipe THREE times! Everyone who has sampled it LOVED it! If you can, this has great recipes to make for gifts or just to EAT!

I have also tried my hand at pressure canning meats and soups - meatballs, roast beef, chicken soup and vegetable beef soup and tomato sauce in the corner there. My completed jars may not be many yet, but will grow!

I am doing some canning this weekend, too. I made some apricot jam and now I have elderberries ready for another batch. They'll taste wonderful during the cold winter months!
